They know because you forward either an A Record or the domain Nameservers to Blue Host. Only the owner of the domain can do this. Call Blue Host support and they will walk you through this.

When I go to change the wordpress address (URL) and the site address (URL), as soon as I hit save, I am no longer able to access my site. I have uninstalled and re-tried twice now. Any help would be much appreciated. I'm finding wordpress difficult.

I registered my domain name on my bluehost account, but I'm working with someone else on a site, and I want him to be able to use the domain on his hosting account while I still retain ownership of the domain name. I'm also slightly confused by this process. How does Bluehost know you are allowed to use that domain name?

Sounds like you need to talk to the support department. That means your server is down. This "can be" common with BlueHost. Please check out Podcast Answer Man episode 220.
